Rustic Sourdough Avocado Toast

Ingredients (Serves 1)
1–2 slices Promise Gluten Free Rustic White Sourdough Bread
1 ripe avocado
1 large egg
1 tsp lemon juice
Sea salt, to taste
Cracked black pepper, to taste
A small pinch of chilli flakes (optional)
Olive oil or butter, for frying
Fresh herbs such as chives or parsley, finely chopped (optional)
Method
1. Toast the Bread
Lightly toast the slices of Rustic White Sourdough until golden and crisp at the edges.
2. Prepare the Avocado
In a small bowl, mash the avocado with lemon juice, sea salt, and black pepper. Keep it slightly chunky for texture.
3. Fry the Egg
Heat a splash of olive oil or a small knob of butter in a pan over medium heat.
Crack in the egg and cook until the whites are set and the edges are lightly crisp.
For a runnier yolk, remove from the heat sooner; for well-done, cook a bit longer.
4.Assemble
Spread the avocado generously over the toasted sourdough.
Top with the fried egg.
5. Finish & Serve
Add an extra pinch of sea salt, black pepper, and chilli flakes if using.
Garnish with fresh herbs for color and aroma.
