Rustic White Sourdough with Creamy Tomato Soup

Ingredients (Serves 2)
For the Tomato Soup:
1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 tin (400g) chopped tomatoes
1 tbsp tomato purée
250–300ml vegetable stock
1 tsp sugar (optional, to balance acidity)
Salt and black pepper, to taste
2–3 tbsp cream or whole milk (optional for a creamier finish)
Fresh basil leaves, for garnish
For the Sourdough:
2–4 slices Promise Gluten Free Rustic White Sourdough Bread
Olive oil or softened butter
Sea salt flakes (optional)
Method
1. Prepare the Soup Base
Heat olive oil in a medium saucepan over medium heat.
Add the onion and cook until soft and translucent, about 5 minutes.
Stir in the garlic and cook for another 1–2 minutes.
2. Add Tomatoes & Simmer
Add the chopped tomatoes, tomato purée, and vegetable stock.
Season with salt and pepper.
Bring to a gentle simmer and cook for 10–12 minutes to blend the flavours.
3. Adjust & Blend
Taste and add a small pinch of sugar if the soup is too acidic.
Blend using a stick blender until smooth.
Stir in cream or milk, if using, and warm through on low heat.
4. Toast the Sourdough
Brush the Rustic White Sourdough slices lightly with olive oil or butter.
Toast in a hot pan, air fryer, toaster, or under the grill until golden and crisp.
Finish with a sprinkle of sea salt if desired.
5. Serve
Ladle the soup into warm bowls.
Garnish with fresh basil.
Serve with toasted Rustic White Sourdough on the side for dipping.
